A soft cheese with a bloomy rind made from pasteurized milk and cream using traditional methods. This Brie is rich and its texture goes from firm to melting, a process which gives it character. Its label changes with the seasons. It is sometimes presented with four maple leaves, which represent Quebec’s four seasons. There is a special edition for winter and the festive season, as well as an edition marking the arrival of spring and the milk produced from spring grazing.
