This firm, rindless cheese with a cream-coloured interior has a buttery aroma and a hazelnut flavour that intensifies with age. Several varieties are available: same-day fresh, 1 year (medium), 2 years (strong) and 3 years (extra-strong). Available from the cheese maker, at specialty grocery stores and cheese shops, and in most of the region’s markets.
Other specialties made from Cheddar du Terroir:
Le P’tit Bronzé is a maple wood smoked mild Cheddar.
Le St-Charles is an aged Cheddar (2 years) steeped in Port wine made from berries.
The Honfleur is a mild Cheddar cheese seasoned with herbs.
