Firm, rindless cheese with cream-coloured interior, a butter aroma and a hazelnut flavour that enhances with age. Several varieties: 3 months (mild), 4 to 9 months (medium) and 10 months to 3 or 7 years (strong and extra strong). Available in most specialty cheese shops and supermarkets.
Cheese curds
The Cheddar Le Beaupré is the winner of the Caseus gold medal 2009. A blend of cream and toasted almonds, finishing with a hint of acidity.
