Organic farm cheese, firm, pressed cheese made from raw cow’s milk. Ripened 3 to 5 months on wood boards from the farm. Copper-coloured with an ivory-gold interior and an aroma of crab apples and butter. It is available from the cheese maker, in specialty grocery stores and cheese shop, and some supermarkets.
