Semi-soft, raw-milk cheese with Morbier-type bloomy rind, with a line of vegetable ash from Greek olives. Its interior is creamy and slightly sticky. Its flavour becomes more pronounced with careful aging. Available at specialty grocery stores and cheese shops, and most supermarkets.
