A young, copper-coloured cheese made from pasteurized milk with a thin, whitish rind. It is a surface-ripened cheese that is soft, creamy and melts in the mouth. Sweet, light flavours of fresh milk and butter. Available from the cheese maker, at specialty grocery stores and cheese shops, and most supermarkets.

Accompaniments
