Le Jersey du Fjord

Les Bergeries du Fjord
Saguenay–Lac-Saint-Jean

This firm, washed-rind cheese is made with raw milk from the Ferme Pierre Girard’s Jersey cows. Interior-ripened for at least 10 months, it is a Cheshire-type cheese manufactured according to British traditional methods. It is known for its granular, crumbly interior punctuated by many small crevices. This feature is the result of the way it is produced: curds are milled into small, differently shaped pieces. The pressing it then undergoes is not enough to remove all these “openings,” which is why the interior is cracked, making it brittle or bluish.

Its aroma and taste are reminiscent of a fresh sea breeze with a hint of orange zest.

The Jersey du Fjord is available from the cheese maker, at specialty grocery stores and cheese shops, and in most supermarkets.
