This firm, lactose-free cheese has a shiny surface dotted with large and very round eyes spread throughout. It is 100% made from pasteurized milk that comes mainly from farms in the Sorel-Tracy region. It has an ivory colour and a light milk aroma with notes of hazelnut. This Swiss-type cheese has a slightly elastic texture and a mild taste with a touch of sweetness and a hint of almonds.
It is also available in a lighter version with 37% less fat than the regular version.

Finalist for the Sélection CASEUS 2014 and 2013 in the category of interior-ripened cheeses with ripening holes, the Riviera Swiss (formerly named Swiss Chaliberg) also won the first prize in its category at the Sélection CASEUS 2001 and 2000 in addition to winning the Public’s Choice Award at the Festival Vins & Fromages de St-Georges-de-Windsor in 2000 and the title of Reserve Champion at the British Empire Dairy Show in 1998.
