Bleu d'Élizabeth's Seventh Heaven
Ingrédients
- 60 ml (1/4 cup) Le Bleu d’Élizabeth cheese, crumbled
- 115 g (1/4 lb) ground beef
- 1 shallot, chopped
- 2 basil leaves, finely chopped
- 5 ml (1 tsp.) capers, chopped
- 1 egg yolk, beaten
- Salt and freshly ground pepper
- 30 ml (2 tbsp.) butter
- 45 ml (3 tbsp.) tomato and avocado salsa, home-made
- 2 leaves of leaf lettuce
- Bread chosen: Mini rustic bread
Préparation
In a bowl, mix the ground beef, shallot, basil, capers, egg yolk and half of the cheese together. Add salt and pepper. Shape into patties and grill in a frying pan. Slice the bread in half and spread each half with butter. Toast the bread. Fill with the meat, rest of the cheese, salsa and lettuce. Close the sandwich.
Tomato and avocado salsa
Ingredients
- 1/2 of an avocado, diced
- 1 tomato, seeded and diced
- Juice of 1/2 lime
- Salt and freshly ground pepper
Preparation
In a bowl, mix all ingredients together. Set aside.

Try this recipe with: Le Ciel de Charlvoix or Bleu Bénédictin.
Accompaniments
These dry wines are characterized by fairly strong aromas of spice, toast or exotic fruit. In the mouth, they carry a rich and well-balanced texture.
