Waffles With Caramelized Pears and Rose Blanche

Ingredients

  • 500 ml (2 cups) unbleached flour
  • 30 ml (2 tbsp.) sugar
  • 5 ml (1 tsp.) baking powder
  • 1 pinch of salt
  • 375 ml (1 1/2 cup) 15% cream
  • 125 ml (1/2 cup) milk
  • 4 egg yolks, lightly beaten
  • 5 ml (1 tsp.) vanilla
  • 60 ml (1/4 cup) butter, melted
  • 4 egg whites, whisked into soft peaks
  • 1 pinch of salt

Preparation

In a large bowl, mix the flour, sugar, baking powder and salt.

Add the cream, milk, egg yolks and vanilla. Mix well.

Mix in the melted butter and egg whites.

Pour enough batter to completely cover grids.

Close the waffle maker. Flip the machine so that the batter is evenly distributed; doing so will result in very crispy waffles. Cook for about 3 minutes on each side or according to the instructions on the waffle maker.

Topping

  • 2 pears, peeled and quartered
  • 45 ml (3 tbsp.) butter
  • 60 ml (1/4 cup) maple syrup
  • 60 ml (1/4 cup) pear jam
  • 60 ml (1/4 cup) 35% cream
  • 250 ml (1 cup) Rose Blanche, rind removed, cut into cubes

Preparation

In a frying pan, brown the pears in butter. Add the maple syrup and pear jam. Continue cooking for several minutes. Set aside.

In a small saucepan, heat the cream, and melt the Rose Blanche in it.

Top the waffles with the pear mixture and drizzle with the Rose Blanche cream.
