This soft farm cheese with a washed rind is ripened for 30 days and made with pasteurized milk drawn from the herd of Brown Swiss cows on the Domaine de la Rivière farm. The square round has an orangey rind that is slightly bloomy, under which is a cheese that is buttery yellow and dotted with small holes. It has a creamy, melt-in-your-mouth texture. The cheese varies in intensity from medium to strong and resembles the Pont l’Evêque, a French cheese. It gives off a strong aroma of hazelnut and has a lingering taste of butter with a hint of vegetable and nuts that becomes stronger with age.
Le 14 Arpents got its name from the road that runs along the cheese maker’s property: Quatorze Arpents Road.
This cheese is available from the cheese maker, at specialty grocery stores and cheese shops as well as from some supermarkets.
