This organic soft, bloomy rind farm cheese is made with raw milk drawn from Brown Swiss cows owned by the cheese maker. It is aged one month and reveals a buttery flavour with fresh mushroom notes.
Enjoy this cheese as is by letting it rest at room temperature for 30 minutes before serving. Covered in nuts, honey and dried fruit, it is also delicious heated in the oven like melted brie.
Lise Pelletier worked for eight years at Fromagerie Au Gré des Champs. Before becoming a cheese maker, she was a warrant officer in the Canadian army. Much more than a dedicated employee, she was a valued member of the Au Gré des Champs family. She passed away suddenly at the age of 54 in 2014. L’Adjudant was named in her honour.
