This firm, uncooked pressed cheese is made with thermized whole milk, except for Special Reserve 120th Cheddar, which is made with raw milk. Perron Cheddar is an authentically Quebec cheese, made from a recipe unchanged since 1895.

Perron Aged Cheddar
This cheese is ripened for 1 to 4 years. It has a butter-yellow colour and a firm, crumbly texture that melts in your mouth. As it ages, tiny crystals become more perceptible when you take a bite. Its hazelnut aroma is stronger than that of the medium Cheddar and becomes more pronounced over time. It is available in different varieties:

- 1 year Cheddar – ripened 12 months
- Special Reserve 120th Cheddar – ripened 18 months and made with raw milk
- 2 year Cheddar – ripened 24 months
- 4 year Doyen Cheddar – ripened 48 months

Perron Cheddar with La Criminelle black beer
Launched in August 2014, this beer-steeped Cheddar is the result of the union between the famous Cheddar Perron and the savoury La Criminelle beer made by the La Voie Maltée micro-brewery in Saguenay–Lac-Saint-Jean. The black, creamy beer with a discreet black licorice and violet aroma reveals a true chocolate, vanilla and coffee treasure. The polished taste of Cheddar Perron allied with the rich flavours of malt produces a result that is both refined and delectable.

Surface-ripened with 10 years port wine and ripened for 6 to 9 months.

Perron Cheddar with brambasia liqueur
The word “brambasia” is an ancient Greek term meaning raspberry. Fromagerie Perron created this Cheddar steeped in brambasia liqueur in 2010, in honour of the cheese maker’s 120th anniversary. The alcoholic liqueur comes from the Domaine Le Cageot in Jonquière and is made with raspberries and blackcurrant grown on their property.

These varieties of Perron Cheddar are available from the cheese maker, at specialty grocery stores and cheese shops, and in most supermarkets.

2013 Cheddar Cheese class winner and 2007 Caseus Or winner at the Sélection Caseus competition, Cheddar Cheese class.

Aromatic and supple

These medium-bodied wines offer supple tannins that of ten carry a certain roundness. They are usually dominated by aromas of ripened fruit or woody notes (toast, coffee or vanilla).
