Ripened for a period for 45 to 90 days, this semi-firm cheese, made from Canadian cow's milk and with a washed rind, is smoked slightly on the surface. Under a nice burnt orange rind appears a smouth and creamy paste in a creamy colour. This cheese offers light notes of natural smoke. It opens up with woody and fruity aromas and ends with a subtil sweet final.
This cheese arises to every occasion, perfect in a raclette.
