This semi-soft, washed-rind farm cheese is made with pasteurized milk from Ayrshire cows. Inspired by the traditions of Pont-l'Évêque in France, this cheese is regularly washed in a saltwater cellar. This acts as a catalyst for the red ferment, creating an orange tinge on the surface while strengthening the texture of the cheese and giving it a distinct flavour.
Bouton d’or borrows its name from a tiny yellow flower that grows in the fields of the 3J Dairy Farm. However, unlike the flower, the cheese has an intense flavour, offering notes of farmland and rustic undergrowth that is slightly sweet (honey).
The Bouton d’Or is available at the cheese dairy, in most Saguenay-Lac-Saint-Jean's specialty shops and food markets, as well as in some specialty stores accross the province.
