Blue-veined

This soft, blue-veined, surface-ripened cheese is made from pasteurized milk and cream. Its ivory-coloured and lightly veined interior is covered in a fluffy white rind. Cheese lovers of all kinds will relish its creamy texture and mildness.

Caronzola was inspired from an old Italian tradition. One day, a master cheese maker from the north of Italy thought he would try mixing a blue cheese with a soft one. To his surprise, the experiment resulted in an exquisite cheese that quickly caught on throughout the region. Today, Caronzola remains a highly-prized cheese.

It is available from the cheese maker, at specialty grocery stores and cheese shops, and in most supermarkets.


Accompaniments

Aromatic and supple

These medium-bodied wines offer supple tannins that of ten carry a certain roundness. They are usually dominated by aromas of ripened fruit or woody notes (toast, coffee or vanilla).
