This soft cheese with a bloomy rind is made from pasteurized milk and cream. This Brie has an aroma of fresh mushrooms and a peppery finish to its taste. Its delicately tart flavour matures to contain notes of butter and hot milk. This cheese ripens slowly from the outside in to develop a perfect creamy texture.
Inspired by the moon as a poetic symbol of beauty and good taste, the Cendré de Lune is covered in a fine vegetable ash to recreate the mythical appearance of moon dust.
