This lactose-free and gluten-free firm cheese is made with thermized organic milk. In keeping with the traditional farming methods of our ancestors, the Fromagerie L’Ancêtre makes this nutritious Cheddar of the highest quality with a natural, old-fashioned taste. After one year of aging, it features a mild and milky aroma and has a slightly salty flavour with a light taste of hazelnut and butter. With age, the milky aroma and hazelnut taste become stronger, its texture becomes more crumbly and the mouthfeel starts to include small crystals.
