This firm, rindless, lactose-free cheese is made from thermized organic milk. It features a buttery aroma and a hazelnut flavour that becomes more pronounced with time. It is available in several varieties:
Biobio Mild Cheddar
It contains less than 0.5% lactose and has been aged from 2 to 6 months.
Biobio Medium Cheddar
It is lactose-free and has been aged from 6 to 9 months.
Biobio Sharp Cheddar
It is lactose-free and has been aged from 9 to 12 months.
Fromages Biobio also produces Biobio Aged Cheddar (up to 4 years).

Biobio cheeses are high-quality organic products free of chemical colouring, artificial flavours and synthetic additives. They are also made using plant-based microbial enzymes, not animal rennet. Organic-certified milk used to make the cheese comes from cow herds raised on family farms in Quebec. The pastures, fodder and grains used for feed contain no synthetic agents such as pesticides, fertilizers or GMOs.
