This firm rindless cheese has a shiny, smooth surface and is made of pasteurized milk. It is creamy white with a hazelnut flavour that gets stronger over time. The cheese has aromas of milk and bitter almond. The Laiterie Charlevoix will sometimes make it from thermized milk and label it as such on the packaging. The cheese comes in different forms: in curds or in blocks, fresh or aged, seasoned with herbs, pepper or hot peppers.
