After being brined for a few hours, this pure white, pleasant-textured unripened fresh, firm cheese is sold at the “cheese made fresh every day” counter. Its name refers to the way the Basques who passed through marked the region’s history. Often called “Le petit Basque” (the little Basque), it brings a little joy to people of all ages!

Des Basques Cheddar

Available in blocks of several formats, this fresh, firm cheese has a smooth, shiny surface. It comes in different colours: creamy white, yellow or marbled. The white and yellow kinds are also available grated. The flavour of this mild Cheddar is reminiscent of hazelnut combined with the aroma of butter. Although it has a less pronounce taste than Aged Cheddar des Basques, it is no less popular. For cooking, the only limit to this Cheddar’s uses is your imagination! It is simply delicious laid on a slice of bread, and is perfect for livening up cooked dishes, salads and sandwiches, baking on pasta and pizzas, and even topping apple pies. A pure delight!

Pepper Des Basques Cheddar

Adding black pepper to mild Cheddar transforms it into a new kind that’s well-liked for its originality and its flavour, especially when eaten fresh. It lends itself to every whim for snack time, lunch or receptions. It is also a welcome addition at tastings and in cooked dishes.

Herb Des Basques Cheddar

Adding herbs to mild Cheddar gives it a special charm, characterized by a pleasant aroma and a flavour to delight the taste buds—especially when served fresh. This Cheddar is a guaranteed hit in countless dishes, from appetizers to main courses. It’s also perfect at lunch or snack time.

Maple Wood-Smoked Des Basques Cheddar

This delicious Cheddar is cold smoked for about four hours with natural maple wood chips, which gives its surface a brownish colour. When cut, it is rather firm and solid, and its yellowish interior features a marked taste accentuated by a smoky aroma. This popular variety of cheese is a delight for many cheese lovers. It can be enjoyed at any time, especially in good company when entertaining.

Cheddar Kwick à Lunch

This fresh, firm, unripened cheese goes “squeak, squeak” when you chew it. Its flavour of hazelnut and butter delights people of all ages at snack time. It is sold individually and in packs of 6 and 12.

Kwick Kwick Cheese Curds

These are available in several varieties, including regular, herb, pepper and BBQ. Fromagerie des Basques opened in 1994, and since then their cheese curds have developed such a reputation that the shop has become an essential stop for those passing through Trois-Pistoles on Route 132. The cheese that goes “squeak, squeak” has a creamy, one-of-a-kind taste.

These cheeses are available at the Fromagerie des Basques and in the refrigerated section of supermarkets, convenience stores and service stations as well as in several fine grocery stores and specialty grocery stores, from La Pocatière to the Gaspésie region and all the way to the border of New Brunswick.

In 2013, a La Presse newspaper survey showed that Quebecers love cheese curds from the Fromagerie des Basques in Trois-Pistoles more than any other (LaPresse.ca, August 26, 2013).
