Made of organic whole milk pasteurized at a low temperature to maintain its nutritional and digestive qualities, Cheddars from the Ferme des Chutes cheese shop are organic, firm, rindless and pale yellow-coloured. These cheeses are made by hand with the utmost care using a time-honoured production process. Their flavours include notes from the various wild and forage crops used to feed the herd of Holstein dairy cows.

The youngest of the Cheddars, this cheese has a soft, elastic texture and a generous flavour.

Le Rapide Arcand (6 Month) Cheddar
M.G.: 34%  Moisture: 39%
This Cheddar is interior-ripened for six months. It has a creamy, elastic texture and a generous flavour, medium intensity, with notes of butter and hazelnut, and a mild almond finish.

Also check out the Aged Cheddar variety, ripened between 1 and 6 years.

Cheese Curds
Buttery and creamy like a Cheddar from 30 years ago, these curds have a juicy, elastic texture. They are slightly salty and keep their juice (whey). Simply delicious! 

This cheese is available at most specialty cheese shops and supermarkets.
