This firm, rindless cheese is made from pasteurized milk. It has a buttery yellow colour, a hazelnut aroma and a crumbly texture that’s firmer than that of medium Cheddar Lemaire. The following aged cheddars are available:
- Cheddar Lemaire Fort – aged 1 year
- Cheddar Lemaire Extra-fort – aged 2 years
What we now know as the Fromagerie Lemaire was established by Marcel Lemaire in 1956, and his children are now at the helm. Committed to providing fresh and high-quality products, this cheese maker is renowned for its traditional cheese curds, which it serves daily, hot and straight from the vat.
Aged Cheddar Lemaire is available at the cheese maker’s two outlets in Saint-Cyrille and Saint-Germain, as well as in convenience stores and grocery stores in the Drummondville and Trois-Rivières regions.
