Firm

M.F. : 34% Moisture : 39%

This firm rindless cheese has a shiny surface and is made of pasteurized whole milk with the exception of the medium Cheddar, which is made with thermized milk. Cheddar Perron is an authentically Quebec cheese, made from a recipe unchanged since 1895.

Mild Perron Cheddar
Made fresh daily or aged less than three months, this creamy white cheese is smooth and supple. It has a very mild hazelnut taste with a milky note. The cheese is available in block or grated formats and different varieties, such as salted, unsalted and poutine cheddar.

Medium Perron Cheddar
This medium Cheddar, aged three to nine months, is made with thermized milk and is a buttery yellow cheese that crumbles lightly with a mild fruity taste and hazelnut notes.

Aged and flavoured Cheddar varieties are also available.

Cheese curds
Over 120 years of know-how go into the making of the Fromagerie Perron cheese curds. This cheese made daily uses a fermentation process developed by the cheese maker. It has a delicate taste of fresh butter and hazelnut and is available in regular or BBQ flavour.

These cheeses are available from the cheese maker, at specialty grocery stores and cheese shops, and in most supermarkets.
