Cheddar Port-Joli firm rindless cheese is made of pasteurized milk exclusively from farms located near the cheese maker. Because of this, the milk imparts lovely aromatic qualities and the subtle flavours of the Saint-Jean-Port-Joli soil. The pale yellow interior of the cheese has a hazelnut taste and a gentle aroma, both of which become more pronounced with age. The fresh cheddar is available in marble and in flavoured varieties such as herb.
