This firm, rindless, organic farm cheese is made with pasteurized organic milk drawn directly from the herd of Holstein cows on the Raymond Alary and sons family farm, where the cheese maker is located. This Cheddar is aged for one month to four years. It has a cream colour, a buttery aroma and a hazelnut taste that becomes stronger with age. It is also available in organic garlic-flower flavour. The sharp Cheddar Troubadour, which is aged for more than two years, is perfect with Port wine.
The cheese maker likes to name its products after medieval-sounding things. The name Troubadour refers to a composer, poet and musician from the middle ages, and also reminds us of the pleasurable and festive atmosphere that often accompanies the enjoyment of fine cheeses. The name of the cheese maker itself, Les Fromagiers de la Table Ronde, refers to the medieval Knights of the Round Table.
