This semi-soft, washed-rind organic farm cheese is now made with thermized milk and ripened for 90 days. Beneath its coppery orange rind is a soft and melting interior dotted with small holes. It has a balanced mouthfeel, and its flavour features hints of fruits, crabapples and butter.
An extended ripening period (four to five months) provides this cheese with somewhat more complex and powerful aromas.
Whether you include it in your cookie recipes, in your mashed potatoes or in sandwiches, this cheese really works in everything—in the kitchen or on a platter.
Comtomme was named in honour of Compton, the village where it is made and a place with a rich dairy- and cheese-making history. Comtomme is Compton’s tomme!
Comtomme and Comtomme Signature are available from the cheese maker, at specialty grocery stores and cheese shops, and in most supermarkets.
