Made from pasteurized skim milk, this fresh, rustic cheese, which contains probiotics and only 0.1% milk fat, is often used in dips, spreads and desserts. Its fresh interior is quite white, and it has a smooth, fairly liquid texture. Its slightly acidic aroma recalls that of yogurt. It has a mild, somewhat acidic taste.
It is the first French-style “white cheese” made in Quebec. It was the inspiration for the creation of the famous Budwig cream.
The Damablanc is available from the cheese maker and in many supermarkets.
