This firm, rindless cheese is made from 100% pure pasteurized milk, and contains no modified milk ingredients. This Swiss-type cheese is first interior-ripened in a warm room for one to two months before being aged in a cold room, where it is surface-ripened for one to two weeks with the Unibroue brewery’s Trois-Pistoles beer, which gives it a hazelnut-coloured rind. Its cream-coloured interior is dotted with large holes (eyes) and has a mouthfeel that is both firm and melting, with hints of beer.
Available in wheels or wedges, Des Basques Beer Swiss makes for attractive appetizers, tastings and fondues. It adds a touch of originality to cooked dishes and brings colour to serving platters.
Des Basques Beer Swiss is available at the Fromagerie des Basques and in the refrigerated section of supermarkets, convenience stores and service stations as well as in several fine grocery stores and specialty grocery stores, from La Pocatière to the Gaspésie region and all the way to the border of New Brunswick.
