This firm, washed-rind cheese is made from pasteurized milk, and contains no modified milk ingredients. Its golden-yellow rind hides a lighter yellow interior. It has a somewhat intense flavour, goes well with a good wine and is simply divine when prepared with potatoes (braised or in their skins) and accompanied with cold cuts and pickles. Des Basques Raclette is available in blocks or in slices.
When you think of raclette, you think of large, friendly tables. This delicious specialty was invented in the Swiss mountains during the Middle Ages—back then, the cheese wheel was scraped (or raclée, hence the name) over a wood fire. The recipe for this cheese travelled all the way to the Fromagerie des Basques, and we are still honouring the old method thanks to the flat grill that uses a convenient, pre-cut slice. There’s no longer any scraping involved, but we still make one heck of a raclette!
Des Basques Raclette is available at the Fromagerie des Basques and in the refrigerated section of supermarkets, convenience stores and service stations as well as in several fine grocery stores and specialty grocery stores, from La Pocatière to the Gaspésie region and all the way to the border of New Brunswick.
