This lactose-free firm cheese is made entirely with pasteurized milk that comes mainly from farms in the Sorel-Tracy region. The pale yellow interior has a supple texture and a shiny surface and is dotted throughout with pin-sized holes (eyes). Slightly salty and creamy to the palate, this Dutch-style cheese has an aroma and a delicate taste of butter with notes of hazelnut. It is as delicious on toast for breakfast as it is in a wide range of cooked dishes or on a tasting platter.
The expertise of four generations of Chalifoux lies behind the cheeses that Laiterie Chalifoux has brought to the tables of Sorel residents since 1920.
This cheese is available from the cheese maker and in most supermarkets in the Montérégie, the greater Montreal and Quebec City.
