This soft, washed-rind organic farm cheese is made with raw milk from the Fromagerie Au Gré des Champs’s herd of Brown Swiss cows in Saint-Jean-sur-Richelieu. The cows are fed organic farming by-products, which gives the milk a unique local flavour that is transferred to the cheese.
This is one of the few raw milk cheeses from here that are ripened for less than 60 days! Since L'Épicurien Le Pic is exclusive to the Fromagerie Hamel, it is ripened for at least 50 days according to their specifications and tastes. The small cylindrical wheel has an orange rind covered with a layer of beige mold. Its ivory yellow interior has a smooth and very supple texture. The cheese features a mild, slightly fruity smell of cellar and straw and a flavour ranging from mild to strong, with an aftertaste of hazelnut and an aroma reminiscent of lychees.
The cheese was named L'Épicurien not only because it has been a source of great pleasure since 2005, but also because it is an exclusive product that fits well in the Fromagerie Hamel’s Le Pic range of products.
L’Épicurien Le Pic is sold exclusively in the six Fromagerie Hamel stores in Montréal and Repentigny.
