This firm, surface-ripened cheese is 100% made with pasteurized whole milk and contains no modified milk ingredients. Its washed rind gives it a distinctive, lingering taste. Beneath its smooth, orangey rind lays a dense, ivory cheese sparsely dotted with small holes. It has an aroma of vegetables and herbs, and its rich taste recalls heated butter and hazelnut. As a snack, you will love its melting texture. In a fondue, you will be astonished by its elasticity and the flavours brought out by its melting texture.
Fromagerie Le Métayer named its cheese L’Exil 1838 as a tribute to the Patriote movement in the historical battle that took place during the 1837–38 rebellion. Many of these courageous Patriotes stayed in Napierville, which is the site of the Declaration of Independence of Lower Canada and where the cheese maker was established.
