M.F. : 28 % Moisture : 44 %Made of thermized milk and aged at least 60 days, Le Fêtard is a semi-soft cheese whose rind is soaked and washed with Maudite, a strong (8%) Quebec beer brewed by Unibroue. The beer gives the coppery orange rind a distinctive bitterness and a slightly caramelized aroma. The dense, cream-coloured interior is firm, supple and crumbly all at once, with aromas of fruits and butter. On the palate, its taste is initially that of cream and butter. The beer’s flavour then becomes more present.
The cheese is made with thermized milk from a neighbouring farm’s Holstein herd. The Notre-Dame-de-Lourdes pastures give the milk, and hence the cheese, a unique character and aroma typical of the Lanaudière region. Add to that the beer-soaking process that gives a festive taste to the Le Fêtard, and you’ve got a cheese that’s sure to win you over!
