This soft cheese, with a white to beige rind that has glints of straw yellow, is made with pasteurized milk and cream. Some orangey traces appear on the rind as it ages. This triple crème Brie is smooth and melts in your mouth without being runny. Its flavour can range from mild to strong depending on ripeness.
The Fleur de Lys proudly displays Quebec’s floral emblem, the fleur-de-lis, reminding us of its bloomy rind and the place where it is made.
