M.F. : 25% Moisture : 48%This firm, rindless cheese is made with pasteurized milk that comes from about thirty farms in the Bellechasse region, which gives the cheese the subtle flavours specific to the region. Flavoured with garlic scapes, this is a Halloumi-type cheese, which is an excellent grilling cheese because it does not melt and conserves its shape during cooking. Try it grilled on a skewer over the barbecue or just fry it up in the pan; the flavour of garlic scapes becomes more pronounced when served hot. You can even try it on top of poutine!
Proud of its beautiful region, the cheese maker named the cheese Fleur Saint-Michel in part because of the garlic scapes, which are the “flower stalks” of the garlic plant, and because Saint-Michel is one of the cheese maker’s neighbouring towns.
Fleur Saint-Michel is available from the cheese maker as well as from supermarkets and specialty grocery stores.
