Fondue des Basques à la Bière des Fous is the third fondue made by 1001 Fondues for the Fromagerie des Basques in Trois-Pistoles! This fondue is a 100% local product from the Bas-Saint-Laurent region and is made from Le Trois-Pistoles and Le Pettigrew cheeses combined with Diable Vert beer from the Microbrasserie Aux Fous Brassant in Rivière-du-Loup. The cheeses’ smoothness and their lightly toasted and umami flavours blend perfectly with the resinous and herbaceous flavours of hops while leaving a vegetable note in the mouth. This fondue creates a harmonious contrast when enjoyed with fruit—vary the accompaniments and try it with pears and apples! This will create layers of flavours that will leave you wanting more.
Innovation and dynamism are a way of life for these three small businesses. The Fromagerie des Basques, which was founded in 1994, is on its third fondue. Since it opened, the Microbrasserie Aux Fous Brassant has been greatly involved in its region. And as for 1001 Fondues, it is quite proud of launching this project and reconnecting with its Bas-Saint-Laurent origins by creating the region’s third fondue.
