This firm cheese made from whole pasteurized milk has a washed rind that is orange-yellow in colour. The cheese itself varies in colour from cream to light grey and features rather large holes. It is slightly elastic, smooth and soft and tends to dry out during aging. It gives off a sweet, slightly acid aroma, while it presents a delicate hint of walnut to the taste.
Just like the Frère Jacques lullaby from our childhood, it is so sweet that it pleases amateurs of all ages.
This cheese is available from the cheese maker, at specialty grocery stores and cheese shops, and in most supermarkets.
