Surface-ripened for 21 days, this smoked, semi-firm cheese is made from pasteurized milk. Its delicately smoky flavour is simply irresistible. Serve it on a platter accompanied by a good beer. It’s also the perfect cheese to add an original touch to all your favourite dishes, from risotto and mac ’n cheese to pizzas and burgers.

Fumerolle cheese is available only at the cheese maker, Délices d'Antan bakeries in Berthierville and occasionally at the IGA supermarket in the same city.
