This semi-soft cheese is made with pasteurized milk. The cheese has a distinct and sharp aroma and a very pronounced hazelnut, mushroom and salted butter flavour. Surface-ripened for over nine weeks, its rind tastes like the beer with which it is washed. A Quebec beer also named Griffon from the McAuslan Brewery in Montreal.
Fritz Griffon Raclette is available from the cheese maker, at specialized grocery stores and cheese shops, and in most supermarkets.
