This rindless semi-soft cheese is made of pasteurized milk. Made in the Cyprus tradition, the cheese is easily identifiable by its rectangular shape folded in half. It has a supple texture, and its taste is mild and rather salty. It may be served fresh, but it is often served grilled, fried or grated in an au gratin dish.
This cheese is available in regular or flavoured with dried mint leaves, Italian spices, garlic, chili or Provence herbs. It is also available in a lighter version:
