The colour ranges of this Emmenthal go from ivory to pale yellow, and its shiny, supple interior is marked with little round holes called “eyes.” Made from pasteurized milk, the cheese has the delicate sweetness of hazelnuts. It placed first in its category at the 2006 British Empire Cheese Show and first at the 2004 Canadian Cheese Grand Prix. Available from the cheese maker, at specialty grocery stores and cheese shops, and in most supermarkets.
