A firm, surface-ripened cheese with a fine, ochre-coloured rind. This ivory cheese melts in your mouth, revealing typical nutty flavours with top notes of fruit and cream. The artisanal production methods used are inspired by an ancient recipe developed by the island’s first cheese makers in the early 20th century. Made from island-produced thermized cow’s milk, this cheese is aged 9 to 12 months to ensure the development of subtle flavours, absorbing the island’s exceptional soil and the salt air.
This cheese is an homage to the island’s rich maritime heritage. The label is a painting by Robert Gagné of L’Isle-aux-Grues. It depicts the transport of supplies and mail by ice canoe, the only way to cross the river during the winter in the era of the original cheese makers. Today, plane and ferry services transport cheese from the island to market.
This cheese is available from the cheese maker, at specialty grocery stores and cheese shops, and in some supermarkets.
