Aged 15 to 30 days, this soft organic farm cheese has a slightly bloomy washed rind. It is made from pasteurized organic milk that comes directly from a herd of Holstein cattle at Ferme Raymond Alary et Fils, a family-owned operation. The cheese is made on the same site and has a rich, melt-in-your-mouth interior with aromas of fresh cream.
The cheese maker likes to name its products after medieval-sounding things. The name La Galette de la table ronde is an allusion to galette au sucre, a warm pie-shaped pastry that originated in the medieval city of Pérouges. Not only is the cheese flat and round like a galette, but it is also a treat that is meant to be shared. The name of the cheese maker itself, Les Fromagiers de la Table Ronde, refers to the medieval Knights of the Round Table.
La Galette de la Table Ronde is available from the cheese maker, at specialty grocery stores and cheese shops, as well as in some supermarkets.
