This soft, surface-ripened and washed-rind cheese is made from pasteurized milk and cream. Its moist and supple rind ripens from the outside in, and its runny ivory interior has a fresh buttery taste with hints of mushrooms. Its creamy texture melts in the mouth, culminating in a rustic note.

La Sauvagine Réserve, exclusively crafted by cheese artisans in a strictly limited edition, serves as a fitting tribute to one of our most acclaimed creations, La Sauvagine! In fact, each 1.2 kg wheel is individually signed and hand numbered by our master cheese maker.

By some estimates, the Quebec sky hosts over 13 million ducks, geese and teals every fall. They make up what we call “sauvagine” (French for “waterfowl”). Inspired by these birds’ splendour, the cheese makers created a remarkable cheese with a deliciously rustic flavour.

La Sauvagine is available from the cheese maker, at specialty grocery stores and cheese shops, and in most supermarkets.

Aromatic and mellow

These dry wines are characterized by fairly strong aromas of spice, toast or exotic fruit. In the mouth, they carry a rich and well-balanced texture.
