This firm, interior-ripened cheese is made from thermized milk. La Tablée’s interior has no holes and is whitish in colour at the centre, becoming amber near the edges. It has a sweet aroma of butter and features a subtle taste of almond and milk. It is a cheese that wins people over easily with its texture and sweet taste. It is popular on crackers or bread, or thinly sliced in sandwiches. It impresses with its sophisticated appearance and subtle flavour.
The meaning of its name, La Tablée, is related to family. As Fromagerie Du Charme's first owner, Olivier Ducharme said: “When I think of this cheese, it reminds me of my childhood and my grandmother, and more specifically the grandmothers of that time who would welcome guests and knew how to gather people around a good meal, where abundance and pleasure rhymed with family, children and happiness.” The cheese maker wishes for people to gather around a table once more and remember these days while taking a break and sharing his cheese, which is sure to draw lots of people together. Today, it is Suzanne Bergeron, owner of Fromagerie Du Charme since 2015, which embodies Olivier's tribute.
