Laliberté is a triple-cream Brie farm cheese made with pasteurized whole milk drawn from Holstein and Jersey cows on the family farm. Its nice and tender bloomy rind surrounds an unctuous paste. Mushroom and cream when young, it stuns with hints of grasses and root vegetables (turnip) as it ages.
The cheese is named after Alfred Laliberté, a sculptor from Sainte-Élizabeth-de-Warwick.
The Laliberté cheese is available from the cheese maker, at specialty grocery stores and cheese shops, as well as from some supermarkets.
