Aged for at least 150 days, this semi-soft, washed- and waxed-rind cheese is made from Launaudière Holsteins’ thermized milk. “Pour les connaisseurs!” (“For connoisseurs!”), L’Amateur is a pure delight for taste buds who appreciate long refined cheeses. It features a nutty, candied fruity and alcohol aroma that will appeal to every cheese lover. For more flavour, the cheese maker recommends you bring it to room temperature an hour before eating it.
Back then, the cheese maker would make cheese from their own herd’s raw milk. Today, the cheeses are made with milk from a neighbour’s herd.
L’Amateur is available from the cheese maker and in specialty cheese shops.
