This firm, rindless, cooked and lactose-free and gluten-free cheese is made from organic thermized milk. It is ripened for at least ten months, which gives it a crumbly texture. This cheese is rich in calcium and has a fruity, salty and slightly spicy flavour. L’Ancêtre Parmesan is available in blocks or grated. At cheese tastings, it goes great with nuts, pears and fresh figs. Whether you use it for hors-d’oeuvres, as a salad topping or to enhance the flavour of your cooked dishes, it provides a special touch that makes all the difference!

In keeping with the traditional farming methods of our ancestors, the Fromagerie L’Ancêtre makes several varieties of cheese from certified organic milk. The company was founded in 1992 by a group of ten dairy producers who shared an alternative vision for working the land. These men and women wanted to return to traditional methods—those of their ancestors, who worked in harmony with the environment. They also felt that this was the only way to give their products the truly natural flavour of old-fashioned cheeses.

L’Ancêtre Parmesan is available from the cheese maker and at IGA, Métro and natural food stores.

Aromatic and supple

These medium-bodied wines offer supple tannins that of ten carry a certain roundness. They are usually dominated by aromas of ripened fruit or woody notes (toast, coffee or vanilla).
