This soft, bloomy rind cheese is made with only pasteurized milk that comes from dairy farms located near the cheese maker. That proximity allows the cheese to preserve the premium aromatic qualities of the milk, as well as the subtle flavours that are unique to Saint-Jean-Port-Joli. Encased in the white, fluffy rind with an aroma of mushrooms is a soft interior with a mild and rich creamy taste, which will delight even the finest of palates.
The name of the cheese, L’Aubert de Gaspé, pays homage to Philippe Aubert de Gaspé, the last lord of Saint-Jean-Port-Joli, who was also an important writer. He penned the novel Les anciens Canadiens. The cheese label showcases Lord Aubert de Gaspé’s portrait and a landscape of the municipality.
L’Aubert de Gaspé is available from the cheese maker and in grocery stores in the region, from Montmagny to Rivière-du-Loup.
